Baking yeast is a common ingredient, but keeping it fresh for an extended amount of time can be challenging. A common question is whether freezing yeast is a viable way to increase its shelf life.
In fact, freezing yeast is a great way to extend its freshness and usability. If you don’t bake frequently, this easy method can help you avoid wasting leftover yeast.
However, for what length of time can yeast be kept in the freezer without losing its potency? Let’s examine how to store yeast in the freezer more effectively and how long it will keep.

Types of yeast
Baker’s yeast is used by housewives for baking at home. Retail stores sell the product as powder, dry granules in various sizes, or as pressed briquettes. Fungi that produce alcohol with yeast speeds up the process of making wine and strong alcohol.
Dry
Dry yeast in the form of light brown granules is most in demand because of its long shelf life and ability to maintain quality under a variety of temperature conditions. The product’s slow activation process is a drawback. This can be explained by the fact that some of the living cells die when the mass’s fragments dry.
Dry yeast can be identified by its composition, shape, and rate of fermentation. Manufacturers also make instant (fast-soluble) and high-speed granules made of small fractions in addition to active granules.
Alcoholic
Alcohol is made from yeast that has been supplemented with salts and is resistant to the toxic ethanol. Their application shortens the time needed for production and enhances mash quality. The result is acetone, which has less fusel oils than alcohol. The product is released in vacuum bags in dry form with a moisture content of 7%.
Fresh bakery

Fresh raw yeast used in bakeries gives bread an almost perfect texture. Live yeast cells are compressed into rectangular briquettes that are 75% moisture and up to 25% dry matter by weight. The product’s color can range from creamy to whitish to yellowish to gray, depending on the type of feed molasses, age, and yeast fungus strain. Fermentation proceeds more quickly with fresh yeast than with dry.
Storage at home
If ideal circumstances are established, the consumer qualities of yeast are retained. Since pressed yeast spoils more quickly than dry yeast, how should it be stored? Temperature, atmospheric humidity, and oxygen availability all impact a product’s shelf life. Pressed yeast should be stored between 0 and 5 °C, while dry yeast should be kept between 14 and 15 °C. In a closed package, the product "suffocates" if the humidity is less than 98% because it dries out, loses some of its mass, and develops a crust.
In the refrigerator
Where should live yeast be kept to maintain its activity? Briquettes do best when kept on the upper shelf of the refrigerator.
Parchment paper acts as a medium for the oxygen required for yeast fungi to remain active. It shouldn’t be airtight if the packaging hasn’t been resealed after being opened.

Dry baker’s yeast bags that have been opened and granules that are 40% humid in their original factory packaging are kept in the refrigerator door.
Brewer’s yeast mushrooms are put into a glass jar, filled with the same amount of water, and stirred before being refrigerated.
In the freezer
In the freezer, live microorganisms do not perish. In the cold, metabolism and biochemical reactions slow down; in the warm, these processes quickly resume. If housewives need to preserve a product that they purchased in bulk, they utilize this property. Brewer’s yeast is an exception, as its activity decreases significantly upon defrosting.
How long is it possible to keep dry and fresh baker’s yeast in the freezer? Bars: six months, the latter 12 months.
After opening the package, the pressed product is divided into pieces for a single dough kneading so as not to subject the entire briquette to temperature changes repeatedly. Every portion is covered with parchment paper and foil. An analogous procedure is applied to dry granules. They are portioned out before being put in the freezer.
Transferring the product from the freezer to the refrigerator allows it to gradually return to its initial state.
Crucial! It is impossible to thaw yeast or yeast dough again.
In the kitchen

Briquettes containing live yeast fungi are stored in the kitchen cabinet for a maximum of one day. Traditional recipes provide longer storage times for yeast. Sprinkled on the bars from all sides, flour and salt serve as preservatives by slowing down the growth of pathogenic microflora. The product has a four-day shelf life when it is in this form.
The yeast will not go bad for six months if the pressed mass is broken up, combined with flour, and then transferred into a glass jar covered with a cotton or linen napkin.
Before use, dry active, fast-acting, and wine yeast with a moisture content of 6% are stored at room temperature away from artificial lighting and ultraviolet light.
Shelf life of yeast
How long and in what circumstances is yeast kept in storage?
- Live. The manufacturer indicates the shelf life of the yeast on the packaging of the briquettes. According to GOST R 54731-2011, a premium product is good for one month, the first – 12 days in the refrigerator. On the shelf of the cabinet, the quality of the yeast mass is preserved for 1 day, in the freezer – 2 years.
- Dry bakery. Powder product, hermetically sealed, is suitable for use from six months to one and a half years, in the refrigerator – a month.
- For fast-acting granules with a high moisture content (40%), the shelf life is reduced to one and a half months at a temperature of 4-8 ° C. After breaking the integrity of the bag, the product is used immediately.
- Yeast granules that do not require preliminary activation contain a minimum amount of moisture, so they do not lose their beneficial properties for 2 years. They can be used after opening the package for two days.
- Wine. The product can be kept active for 2 years, provided that it is stored in a cool room without access to light.
- Beer. In the refrigerator, an unopened package is stored for 2 years, in a glass jar with water – 1 month.
| Type of Yeast | Storage Duration in Freezer |
| Dry Yeast | Up to 6 months |
| Fresh Yeast | Up to 3 months |
If you don’t use yeast very often, freezing it is a great way to extend its shelf life. For home bakers, freezing both active dry yeast and instant yeast preserves their potency, making it a practical choice.
Yeast keeps well for up to six months or longer in the freezer when kept in an airtight container. This keeps the yeast fresh for your recipes by preventing air and moisture from affecting its quality.
Allow the frozen yeast to thaw for a few minutes before using it. It will work more effectively in your dough if you do this. One simple and dependable way to make sure you always have yeast on hand is to freeze it.
It is possible to increase the shelf life of yeast by storing it in the freezer. Both instant and active dry yeast freeze well, extending their useful life by at least six months. When yeast is frozen, its activity is slowed down and it stays viable until you’re ready to use it. Just be sure to keep the yeast away from moisture and freezer odors by storing it in an airtight bag or container.
